Is Crispy Chicken in the UAE Halal?
The UAE is a Muslim-majority country, and halal is the norm in its restaurants. Meat in the country also falls under national halal rules. Even so, if you need full certainty, ask the restaurant directly. This is general information, not a religious ruling.
Crispy Chicken Styles Explained
| Style | What makes it different |

| Pakistani-style | Yogurt and spice marinade with chilli in the coating |
Pakistani-Style Crispy Chicken Recipe (Halal)
Now for the fun part. This home recipe uses a yogurt marinade, much like many Pakistani kitchens do. As a result, the meat stays tender while the coating turns golden and crunchy.
Ingredients
For the marinade
- 1 kg chicken pieces (legs, thighs, breasts), skin on or off
- 240 g plain yogurt
- 1 tbsp ginger-garlic paste
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tsp red chilli powder
- 1 tsp black pepper
- 1 tsp paprika
the coating
- 250 g plain flour
- 60 g cornflour
- 1 tsp baking powder
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp chilli flakes
For the dip
- 2 eggs
- 120 ml milk
For frying
- Vegetable oil, enough for deep-frying
Method
- Marinate the chicken. Mix all marinade ingredients in a bowl. Add the chicken and coat well. Then cover and chill for at least 2 hours, or overnight for the best flavour.
- Mix the coating. In a large bowl, combine the flour, cornflour, baking powder and spices.
- Prepare the dip. Whisk the eggs and milk together in another bowl.
- Coat the chicken. First, lift a piece from the marinade and let the extra drip off. Next, press it into the flour, dip it in the egg mix, and press it into the flour again. This double coating creates the crunch.
- Rest the coated pieces. Leave them on a tray for 10 minutes. That way, the coating sticks better while frying.
- Heat the oil. Heat the oil to about 160–170°C in a deep pan.
- Fry in batches. Fry bone-in pieces for 12–15 minutes, turning once, until deep golden. Boneless strips need about 5–7 minutes. Don’t overcrowd the pan, or the oil will cool.
- Check it’s cooked. The inside should reach 74°C, and the juices should run clear.
- Double fry for extra crunch (optional). Raise the oil to 180°C and fry again for 1–2 minutes.
- Drain and serve. Place the pieces on a wire rack, not paper, so they stay crisp. Serve with garlic sauce, ketchup or green chutney.
Tips for Extra-Crispy Chicken
- Use cornflour. It makes the coating lighter and crunchier.
- Add a splash of marinade to the flour and rub it in with your fingers. Small clumps form, which fry into extra-crunchy bits.
- Keep the oil temperature steady. Too hot burns the outside, while too cool makes it greasy.
- Rest on a rack. Steam makes chicken soggy on a flat plate.
- Air fryer option: Spray the coated pieces with oil and cook at 200°C for about 20–25 minutes, turning halfway.
What to Serve with Crispy Chicken
Easy sides
- French fries or masala fries
- Coleslaw
- Garlic sauce (toum) or mayo dip
- Bun or soft bread
